Storybook farms and picturesque ranches dot the countryside, and you can still hear folks speaking Alsatian - a German/French dialect from Alsace - in Fredericksburg, Boerne and New Braunfels. Enjoy big skies, views for miles and rolling countryside that makes every photo look like a magazine-spread. The fertile area of Castroville was first settled in 1844 and the fertile ground remains mainly natural and used for livestock which means the scenes you see today are a near match for the same scenes way back when!
